Instructions for making pancakes
- Take the clean (fat-free) egg whites and start beating with an electric hand mixer or beat until the whites are fluffy, then add the sugar and beat until smooth (the whites).
- Mix dry ingredients together - flour, cornstarch, baking powder. In another bowl, beat egg yolks, condensed milk, oil and vanilla. Now add the dry ingredients in two to three parts to the liquid mixture, making sure there are no lumps in the flour.

- Now heat a non-stick skillet a little (non-stick skillet is a must), don't overheat, it's just starting to get hot, just low heat. Now put some vegetable oil on a paper towel/muslin/cotton (the oil will only have a name).
- Wipe the shape with parchment paper and roll the dough into whatever shape you like + no need to flatten it with a spatula or the like, the dough will spread and form a round shape). Now cover the pan with a lid and bake for less than 30 seconds to a minute, during which time the pancakes will be 99% firm and brown.
- Cover the other side and bake for 30 to 1 minute and your pancakes are done. (If you like, you can flip it again and let the golden coffee side cook for another 30 seconds until you get the color you want, but be careful not to burn it.)
